Cheesy Beef Soup

Serve with plenty of crusty bread. Mop that bowl with crusty bread, it's that good. 

Cheesy Beef Soup
Recipe by Christine Lamb - 2015

1 pound ground beef
1 onion, chopped
salt and pepper
1 package taco seasoning mix
1 (4 oz.) can chopped green chilies
1 (14.5 oz.) can diced tomatoes
1 cup white rice
2 cups water
1 1/4 cup shredded cheese, plus additional for garnish

In a skillet add beef over medium heat, breaking meat up. Add onions, salt and pepper, cook until meat is no longer pink. Add remaining ingredients except cheese. Stirring, cover and cook 20 minutes. Uncover, stir in cheese, cover for 5 minutes. Garnish with additional cheese, if desired.

  1. Sounds good to me though I might cut back on the amount of cheese a bit. Keep well Diane
