Fruit Salad with Vanilla Yogurt

Did you know the strawberry is a member of the rose family? Common varieties are a hybrid of the wild Virginia strawberry, native to North America. The plant produces red, conical fruit from tiny white flowers, and sends out runners to propagate. Plants can last up to 5 to 6 years with careful cultivation,  a lot of farmers use them as an annual crop, replanting every year.

Crops take 8 to 14 months to mature. Strawberries requiring both a male and female to produce fruit.

Strawberries are native to North America, and the Indians used them in many dishes. The first colonists in United States shipped strawberry plants back to Europe, early1600. Early Americans didn't cultivating strawberries, due to they were abundant in the wilds. Now 75 percent of the North American crop is grown in California, and many areas have Strawberry Festivals, first one dating back to 1850.

Fruit Salad with Vanilla Yogurt
Recipe by Christine Lamb (Christine's Pantry), 2015, All rights reserved.
 
Ingredients:
2 cups low fat vanilla yogurt
2 tablespoons honey
orange juice, just enough to cover banana
1 banana, sliced
1 pint fresh strawberries, hulled and cut in half
1 pint fresh blueberries
 
Directions:
In bowl, combine yogurt and honey and set aside. In a separate bowl, combine orange juice and banana. Add strawberries and blueberries, Gently mix fruit. Spoon fruit into serving bowls and top with yogurt. Enjoy!
