Pecan Smoked Garlic Sausage Pilaf

Make this simple recipe. You can have this dinner on the table in no time.

Pecan Smoked Garlic Sausage Pilaf
Recipe by Christine Lamb - 2015

Ingredients:
1 (13 oz.) pecan smoked garlic sausage, sliced thin
1 small white onion, chopped
1 small green bell pepper, chopped
4 ounces mushrooms, chopped
salt and pepper
1/2 teaspoon minced garlic
1 cup cooked white rice (see note)
1 tablespoon olive oil
1 green onion, chopped for garnish

Directions: 
Cook rice according to package directions. 

Heat oil in skillet over medium heat. Saute smoked sausage, onion, green bell pepper, mushrooms, salt, pepper and garlic, until veggies are tender. Stir in cooked rice. Garnish each plate with green onions. 

Note: Cook rice in beef broth instead of water.

  1. Oh, Christine, I love your suggestion to "beef up" the rice flavor with beef broth! I'm not sure I can get pecan smoked garlic sausage here, so I'll probably throw some pecans (and garlic) into the mix with smoked sausage... whatever it takes to make this dish! Thank you.
