Sausage Hash

Hash is usually served for breakfast, but this dish makes an awesome simple dinner. If you're going to serve this in the morning serve alongside scramble eggs.

Sausage Hash
Recipe by Christine Lamb - 2016

Ingredients:
2 large potatoes, peeled and cubed
1/2 pound bulk sausage
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 onion, chopped
salt and pepper
1 tablespoon cumin
1 teaspoon garlic powder
1 tablespoon vegetable oil
1 tablespoon butter

Directions:
Cook potatoes in salted boiling water, about 4 minutes. Drain and set aside.

In large skillet, over medium heat, brown sausage, and crumble as it cooks, about 8 to 10 minutes, using a slotted spoon remove sausage to paper towels to drain. 

Heat oil and melt butter in a skillet over medium high heat. Add onions, bell peppers and garlic, Cook until tender, about 5 minutes. Add sausage, cumin and potatoes, and cook another 5 minutes. Season to taste with salt and pepper.
