Italian Sausage and Rainbow Pepper Penne

This Italian sausage penne has a wholesome goodness. Delicious!

Italian Sausage and Rainbow Pepper Penne

Ingredients:
2 tablespoons extra virgin olive oil
2 cups penne 
5 italian sausage links, casting removed
1 red bell pepper, sliced thin
1 orange bell pepper, sliced thin
1 yellow bell pepper, sliced thin
salt and pepper
1/3 cup pasta water
1 teaspoon garlic, minced
1 (15 oz.) can basil, garlic, oregano diced tomato
1 (8 oz.) can tomato sauce
1 teaspoon dried oregano
3 green onions, chopped
3/4 cup parmesan cheese, grated

Directions:
Cook pasta according to package directions. Making sure to add plenty of salt to the pasta water. Drain.

Remove sausage casting and make tiny meatballs. Heat oil in deep skillet over medium heat. Add meatballs, cook about 10 minutes, until no longer pink, turning once. Remove sausage from pan. Add bell peppers, sprinkle with salt and pepper. Cook until tender about 5 to 7 minutes. Add pasta water, garlic, diced tomatoes and tomato sauce, stirring. Add meatballs. Add pasta, oregano and green onions, toss well. Garnish with parmesan cheese.
