8 flour or corn tortillas
vegetable oil for frying
1 (10 oz.) can refried beans
1 (10oz.) can black beans, drained and rinsed
4 ounces shredded cheddar cheese
1 medium tomato, seeded and diced
Pour enough oil in skillet to go 1/4 inch up the side of skillet. Add tortillas one at a time. Using metal tongs to push tortilla down into oil. Bubbles should form in tortilla immediately, if no bubbles, oil is not hot enough. Fry tortilla 1 minute each side. Place tortillas on rimmed sheetpan and place in 250 degree oven to keep warm.
Heat refried beans in a small saucepan. Place black beans in a safe microwave dish, and heat through, about 2 minutes.
Build: Spread refried beans on each tortilla, than add about tablespoon black beans, sprinkle cheese, add tomatoes and lettuce.
